‘Samlor Tohu Kachay’ – Silken tofu, mushroom & chive Soup
This is a simple vegetarian soup, popular with Khmer Krom people. The Khmer Krom is an indigenous Khmer community living in Southern Vietnam which was once part of the Kampuchean Empire but which was colonised by Vietnam in the 17th Century.
2 litres water
4 tbsp mushroom sauce
1 tsp salt
½ tsp kampot or black pepper, freshly cracked
1 tbsp sugar
600g silken tofu, diced
100g enoki mushrooms, stalks trimmed short
250g garlic chives, finely chopped
In a large saucepan, bring the water to the boil with the mushroom sauce, salt, pepper and sugar, over medium heat.
Reduce the heat to a simmer, add the silken tofu, enoki mushrooms and garlic chives and simmer for 2 minutes or until the tofu is warmed through.
Serve alone or with steamed rice.
