Savoury Porridge with Soy sauce and Spring onion

This is my quick & healthy family breakfast for those cold, busy weekday mornings!

It is easy to prepare – it’s not so much a recipe, more a starting point to show you just how easy it is to make porridge savoury. So change your whole mindset about breakfast.. and eating more of those healthy oats. This is a great starting point for you to add your favourite flavours to – ginger, garlic, chilli or a poached egg, this dish can be easily individualised to the max and suit any member of the family, however fussy!

Ingredients

1 cup of rolled oats

2 cups of water

A small pinch of salt (remember the soy is salty too..)

2 teaspoons soy sauce or tamari

1 tablespoon spring onions

Method

Combine water, rolled oats and pinch of salt in a medium saucepan . Cook stirring often over a medium heat for approx  6-8 minutes add more water if you prefer your oats runnier.

Take off the heat and stir in the soy sauce (or tamari) and half the spring onions. Put into bowls and serve with your choice of toppings …

Extras

Chilli – fresh or ground

Spring onions finely chopped

Grated fresh ginger

Soy (or Tamari)

A poached egg (poach separately and serve on top )

TASTY TIPS

Soak your oats overnight – they cook faster and produce a creamier porridge.
